What You’ll Need…
- 1 pound shrimp, peeled and deveined
- 1 cup all-purpose flour
- 1/2 cup cornstarch
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 cup Lime Bubbles
- Zest of 1 lime
- Oil for frying
- Lime wedges for serving
What You’ll Do…
- In a mixing bowl, whisk together the flour, cornstarch, baking powder, salt, and lime zest. Gradually add Lime Bubbles, stirring until the batter is smooth (it should be a little thicker than pancake batter—think fluffy clouds!).
- In a deep frying pan, heat oil over medium-high heat until it reaches 350°F (175°C).
- Dip each shrimp into the batter, allowing any excess to drip off, then carefully place them in the hot oil.
- Fry the shrimp in batches until golden brown and crispy, about 2-3 minutes. Remove and drain on paper towels.
