You know what’s the worst part about growing up (well, besides taxes, the DMV, and rush hour traffic)?
When you have a memory of something from childhood that just doesn’t live up to the way you remember it.
Pushing the elevator buttons? Doesn’t hit the same.
Mini golf? Not great (and we’re convinced it’s rigged).
Fairfood? Don’t get us started…
Well, today, mature (because that sounds way nicer than old) friends, we have a recipe for one such fair food that DOES live up to your childhood memories! Yes, it required a bit of grownup finesse and a touch of healthification, but we promise these Low Carb, High Protein Corn Dogs are just as delicious as the ones you’d get from the same stand that sold cotton candy the size of a toddler and soft serve cones that most certainly would end up as a sugary, melted puddle.
So if you’re ready to take a walk down mmm…memory lane with us, let’s get cookin’!
What You’ll Need…
- 1 cup almond flour
- 1/4 cup coconut flour
- 1 teaspoon baking powder
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon paprika
- Salt and pepper to taste
- 1 large egg
- 1/2 cup Original Bubbles
- 6 keto-friendly breakfast sausages or Italian sausages (cut in half if using links)*
- Oil for frying (avocado or coconut oil works well)
*Suggested Keto Sausage Options:
- Keto Breakfast Sausages: These are usually made from ground pork or turkey and seasoned with herbs and spices. They’re often available in links or patties, and you can simply cut the links in half for smaller corn dogs.
- Italian Sausage: Look for sugar-free varieties of Italian sausage, which can add a nice spiced flavor to your corn dogs. You can use either sweet or spicy Italian sausage, depending on your taste preference.
- Chicken or Turkey Sausages: These are often lower in fat and calories while still being keto-friendly. Be sure to choose varieties that are free from added sugars.
What You’ll Do…
- If using links, slice them in half. Pat them dry with a paper towel to help the batter stick.
- In a mixing bowl, combine the almond flour, coconut flour, baking powder, garlic powder, onion powder, paprika, salt, and pepper. Whisk until well combined.
- In a separate bowl, beat the egg and then add the Original Bubbles. Mix this into the dry ingredients until you have a smooth batter.
- In a deep skillet or pot, heat about 2 inches of oil over medium heat.
- Insert a skewer into each sausage, then dip it into the batter, ensuring it’s fully coated.
- Carefully place the coated sausages into the hot oil and fry for about 3-4 minutes or until golden brown.
- Remove the corn dogs from the oil and place them on a paper towel-lined plate to drain excess oil. Serve hot with your favorite keto-friendly dipping sauces! Dip, sip (more Bubbles, obviously), and enjoy!
