What You’ll Need…

For the Meat:

  • 1 lb (450g) flank steak or chicken breast
  • 1 bottle of Lime Bubbles
  • 2 cloves garlic, minced
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • 1 tsp paprika
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tbsp olive oil

For the Tacos:

  • 8 small corn or flour tortillas
  • 1 cup shredded lettuce
  • 1 cup diced tomatoes
  • 1 avocado, sliced
  • 1/2 cup diced red onion
  • 1/2 cup crumbled queso fresco or shredded cheese (optional)
  • Fresh cilantro, for garnish
  • Lime wedges, for serving

What You’ll Do…

  1. Marinate the Meat:
    1. In a mixing bowl, combine the Lime Bubbles sparkling water, minced garlic, cumin, chili powder, paprika, salt, and black pepper.
    2. Add the flank steak or chicken breast to the marinade, ensuring it is fully submerged. Cover and refrigerate for at least 1 hour (up to 4 hours for more flavor and tenderness).
  2. Cook the Meat:
    1. Heat the olive oil in a skillet or grill pan over medium-high heat.
    2. Remove the meat from the marinade and let any excess liquid drip off. Discard the marinade.
    3. Cook the meat for about 4-5 minutes per side (for flank steak) or until cooked through (for chicken), depending on thickness. Use a meat thermometer to ensure chicken reaches an internal temperature of 165°F (75°C) and flank steak reaches at least 130°F (54°C) for medium-rare.
    4. Remove from heat and let rest for 5 minutes before slicing.
  3. Prepare the Tacos:
    1. While the meat is resting, warm the tortillas in a dry skillet over medium heat for about 30 seconds on each side, or until pliable.
    2. Slice the cooked meat into thin strips.
  4. Assemble the Tacos:
    1. Place a few slices of meat on each tortilla.
    2. Top with shredded lettuce, diced tomatoes, avocado slices, diced red onion, and queso fresco or shredded cheese if desired.
    3. Garnish with fresh cilantro and serve with lime wedges on the side.
  5. Serve:
    1. Enjoy your tasty tacos with another bottle of Lime Bubbles, the perfect pair to this flavor fiesta!

Tips:

  • For added flavor, add a splash of lime juice to the marinade.
  • Feel free to customize the toppings based on your preference; jalapeños, sour cream, or pico de gallo also make great additions!
