VEGAN FRIED TAJIN CRUSTED ‘CHICKEN’

Calling all plant-based baddies, this one’s for you! If you’ve been craving perfectly crispy fried goodness that a certain colonel has trademarked, we’ve got a vegan version that delivers all of the golden goodness and none of the animals. Our recipe for Vegan Fried Tajin Crusted "Chicken" uses oyster mushrooms for a meaty texture and gets a major pop of spice from a Tajin-infused crust.
This citrus-spiked copycat fried chicken is finished with Lime Bubbles, the secret ingredient for a light, crispy crust that’ll bring the tastebud tang that makes this recipe so freakin’ fried-licious. So enough chit chat, it’s time to get cookin’.
What you’ll need…
- 1 package oyster mushrooms
- 2 cups flour
- 12oz Lime Bubbles
- 1 tbsp garlic powder
- 1 tbsp onion powder
- 3 tbsp Tajin seasoning
- 1 tbsp lemon pepper seasoning
- Cooking oil of choice for frying
What you’ll do…
- Place mushrooms in a bowl and season with your favorite seasoning in another bowl or plastic bag.
- Dry mix: add 1 cup of flour and the seasoning in a bowl.
- Wet mix: add 1 cup flour, and the same seasoning, and carefully pour the Lime Bubbles into the mixture.
- Continue to pour in Lime Bubbles until the batter is the consistency of pancake batter.
- Add mushrooms to the wet mixture first, then into the dry.
- Shake off excess batter before adding it to the hot oil.
- Cook until crispy and brown.
- Drain mushrooms on a paper towel to remove excess oil from the mushrooms.
