What You’ll Need:

  • 1 1/2 cups all-purpose flour
  • 2 tablespoons sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup mashed ripe banana (about 2 bananas)
  • 1 cup Strawberry Bubbles
  • 1/2 cup milk (dairy or plant-based)
  • 1 large egg
  • 2 tablespoons melted butter or oil
  • 1/2 cup fresh strawberries, chopped
  • Butter or oil for cooking
  • Maple syrup and extra strawberries for serving

What You’ll Do:

  1. In a large bowl, whisk together flour, sugar, baking powder, and salt.
  2. In another bowl, mix mashed bananas, Strawberry Bubbles, milk, egg, and melted butter until well combined.
  3. Pour the wet ingredients into the dry ingredients and gently stir until just combined. Fold in the chopped strawberries. Be careful not to overmix—the batter should be a bit lumpy.
  4. Heat a non-stick skillet or griddle over medium heat and lightly grease with butter or oil.
  5. Pour about 1/4 cup of batter per pancake onto the skillet. Cook until bubbles form on the surface and edges look set, about 2-3 minutes. Flip and cook for another 1-2 minutes until golden brown.
  6. Repeat with remaining batter.
  7. Serve warm with maple syrup and extra fresh strawberries.
