What You’ll Need:
- 1 1/2 cups all-purpose flour
- 2 tablespoons sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1 cup mashed ripe banana (about 2 bananas)
- 1 cup Strawberry Bubbles
- 1/2 cup milk (dairy or plant-based)
- 1 large egg
- 2 tablespoons melted butter or oil
- 1/2 cup fresh strawberries, chopped
- Butter or oil for cooking
- Maple syrup and extra strawberries for serving
What You’ll Do:
- In a large bowl, whisk together flour, sugar, baking powder, and salt.
- In another bowl, mix mashed bananas, Strawberry Bubbles, milk, egg, and melted butter until well combined.
- Pour the wet ingredients into the dry ingredients and gently stir until just combined. Fold in the chopped strawberries. Be careful not to overmix—the batter should be a bit lumpy.
- Heat a non-stick skillet or griddle over medium heat and lightly grease with butter or oil.
- Pour about 1/4 cup of batter per pancake onto the skillet. Cook until bubbles form on the surface and edges look set, about 2-3 minutes. Flip and cook for another 1-2 minutes until golden brown.
- Repeat with remaining batter.
