Healthy Low-Calorie Family Dinner Recipe: Grilled Lemon Herb Chicken with Quinoa and Veggie Salad

What You’ll Need…

For the Lemon Glazed Grilled Chicken

  • 4 boneless, skinless chicken breasts
  • ⅓ cup oil
  • juice of 2 lemons - (about 6 tablespoons)
  • 4 tablespoons honey
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1 teaspoon Italian seasoning
  • ¼ teaspoon black pepper

For the Quinoa and Veggie Salad:

  • 1 cup quinoa, rinsed
  • 2 cups water or low-sodium vegetable broth
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1 red bell pepper, diced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh mint, chopped
  • 1/4 cup feta cheese, crumbled (optional)

For the Dressing:

  • 1/4 cup extra virgin olive oil
  • Juice of 1 lemon
  • 1 tsp Dijon mustard
  • 1 clove garlic, minced
  • Salt and pepper to taste

For the Chicken:

What You’ll Do…

  1. Whisk together oil, lemon juice, honey, garlic powder, salt, Italian seasoning, and black pepper.
  2. Place chicken in a large resealable plastic bag. Add half of the sauce mixture and seal the bag. Chill at least 1 hour or overnight. Reserve remaining sauce.
  3. Preheat grill to medium heat. Remove chicken from bag and discard the bag and marinade. Place chicken on grill and cook 5-7 minutes on each side until cooked through.
  4. While chicken is cooking (or immediately afterwards) add reserved sauce to small sauce pan and bring to a boil over medium-high heat. Reduce heat to medium-low and simmer 5-6 minutes.
  5. Drizzle sauce over grilled chicken and serve immediately. Garnish with lemon wedges and fresh herbs if desired (I used fresh basil).

For the Quinoa Salad

  1. In a medium saucepan, bring the water or vegetable broth to a boil. Add the rinsed quinoa, reduce the heat to low, cover, and psimmer for about 15 minutes, or until the quinoa is cooked and pthe liquid is absorbed. Fluff with a fork and set aside to cool.
  2. In a large bowl, combine the cherry tomatoes, cucumber, red bell pepper, red onion, parsley, and mint. Add the cooled quinoa and mix well.
  3. In a small bowl, whisk together the olive oil, lemon juice, Dijon mustard, minced garlic, salt, and pepper. Pour the dressing over the quinoa and veggie salad, tossing to coat evenly. Add feta cheese if using..
  4. Serve it up! Plate the grilled lemon herb chicken alongside the quinoa and veggie salad. Garnish with fresh parsley and lemon slices.

Sugar-Free Sparkling Strawberry Lemonade

What You’ll Need…

  • 1 cup fresh strawberries, hulled and sliced
  • 1/4 cup fresh lemon juice (about 2-3 lemons)
  • 2 tablespoons honey or agave syrup (optional for added sweetness)
  • 1 can of JUST Lemon Bubbles
  • 1 can of JUST Strawberry Bubbles
  • Ice cubes
  • Lemon slices and strawberry slices for garnish
  • Fresh mint leaves for garnish (optional)

What You’ll Do…

  1. Prepare the Strawberry Puree:
    • Place the fresh strawberries in a blender or food processor.
    • Blend until smooth, then strain through a fine mesh sieve to remove seeds. You should have about 1/2 cup of strawberry puree.
  2. Mix the Lemonade Base:
    • In a large pitcher, combine the strawberry puree and fresh lemon juice.
    • If you prefer a sweeter lemonade, stir in the honey or agave syrup until well mixed.
  3. Add the Sparkling Water:

    • Fill glasses with ice cubes.
    • Pour the sparkling strawberry lemonade over the ice.
