SUMMER SIP-SPIRATION: SPARKLING PIÑA COLADA

When it comes to vacay-mode cocktails, nothing compares to a freshly blended piña colada–complete with a mini-umbrella, and preferably enjoyed poolside, beachside, or anywhere that serves the out-of-office energy you need while enjoying this paradise-perfect drink. However, if a trip to the tropics isn’t in the cards or the budget right now, rest-assured that one taste of this sparkling colada creation will transport you to your own oasis. The best part? You don’t even need to bust out (or clean) a blender to sip your way to beachside bliss.
So, if you like piña coladas (& getting caught in the rain), this delicious drink is for you!
Sparkling Piña Colada
What You’ll Need:
- 3 tbsp cream of coconut, (from a 15 ounce can)
- 3 tbsp coconut sugar, (or raw cane sugar)
- 2 tbsp coconut water
- 1 lime, juiced and zested
- 4 oz light rum
- 1 can JUST Coconut Mint Bubbles
- Fresh mint, sliced pineapple, & cherries for garnish
What You’ll Do:
- In a cocktail shaker, mix cream of coconut, sugar, coconut water, lime juice, lime zest, and rum until the cream of coconut is fully emulsified and the mixture is well combined.
- Between two glasses, strain the mixture and pour over ice.
- Top off with JUST Coconut Mint Bubbles, garnish with mint, a slice of fresh pineapple, and cherries.
- Serve with a miniature cocktail umbrella & enjoy!
